Fromagerie Tournevent

Fromagerie Tournevent is located in Chesterville, Quebec, Canada and began as a small cottage industry in 1979. Our agrarian roots remain the central core of our enterprise, philosophically, culturally and economically as we’ve grown from a handful of friends to a large family.


The challenge has been to adapt and integrate our artisanal cheese maker ways with modern technology as well as environmental, nutritional and food safety concerns without upsetting the cart. Tournevent today produces a variety of award winning goat milk cheeses and butters. In French, a “tournevent” symbolizes a “weathervane”.

Our daily, fresh goat milk supply comes from two cooperatives located in the heartland of Quebec’s Appalachian dairy country with verdant pastures bordered by maple forests. The lay of the land, the free-ranging goats, combined with the traditional French culinary culture and the art of our cheese maker, unite … the essence of what the French call “terroir”.

Tournevent still makes all its goat cheeses in the traditional way in double vats, pasteurized at low temperature to preserve the nutritional qualities of the goat’s milk as well as to bring out the deeper, more complex flavors inherent in the milk source. This fundamental respect for goat’s milk is carried through all our production methods, aging techniques and unique packaging.

You won't find Tomme Crayeuse (tohm cray-YUHZ) in many reference works on cheese, as it is a relatively new invention. Created about eight years ago by the French affineur (cheese maturer) Max Schmidhauser, working with a cheesemaker, this new tomme is an attempt to make a cheese that resembles Tomme de Savoie but with more personality. I'd say they've succeeded. Made in France's Savoie region from pasteurized cow's milk, a wheel of Tomme Crayeuse weighs between 3 1/2 and 4 pounds. The natural rind is lovely, richly coated with gray and white molds and sometimes the yellow mold that I've only seen on cheeses from this region. Inside, you'll find a dense, semisoft, pale ivory paste. If sufficiently mature, the cheese will be creamy under the rind, with a touch of chalkiness at the heart (crayeuse means chalky in French). The aroma reminds me of mushrooms, earth and damp cellar. On the tongue, the cheese shows pronounced yet pleasing acidity, a characteristic that distinguishes it from the milder Tomme de Savoie. The rind should be cut away.

Wensleydale’s Cheddar & Caramelized Onions In 1150 a monastery was built at Fors, four miles from Hawes, but some years later the monks moved, because of hostile natives and inclement weather, to Jervaulx in Lower Wensleydale. These French Cistercian monks brought with them their special recipe for cheese making, which continued until the dissolution of the Monasteries in the 16th century. The art then passed to local farmers' wives who, for more than three hundred years, produced the cheese in their own farmhouses.
